Whole beef orders can specify their cuts. Custom cut specifications are available at $1600 / QTR, ($20 per pound) for whole beef order. This does not mean you can order only steaks. By body composition, there will always be some hamburger, some steak, and some roasts. An example of a custom request would be if you want NY strip instead of the customary T-Bone steak, or you want your hamburger meat shaped into patties instead of in 1 pound packages.
